This artisanal, fermented plant-based cheese alternative is traditionally handcrafted and aged for 5–8 weeks in the cool chambers a small Spanish manufactory. During this time, basil, rosemary, thyme, and oregano blend beautifully with the creamy lupin–cashew base, developing a full-bodied, savory flavor. A gentle tang and smooth texture make this a true delicacy. Free from gluten, lactose, and cholesterol, this vegan specialty is a valuable source of protein, essential fatty acids (Omega-3, -6, and -9), and natural probiotics (due to the fermentation process) that can support a healthy gut microbiome. The selected herbs are known for their beneficial effects as well: Thyme helps alleviate symptoms of colic; rosemary helps to recover from respiratory and digestive diseases; oregano reduces fever; basil is antispasmodic and digestive; marjoram is essential in aromatherapy and relieves muscle pain; chervil is an expectorant and has anti-inflammatory properties; tarragon is a eupeptic which helps digestion and lavender facilitates sleep. For the best flavor, store between 2–10 °C and keep the block uncovered so it can “breathe” and continue to mature naturally. Remove from the fridge about five minutes before serving to allow the aromas to unfold fully. Note: This product is not cheese! It’s not made from the mother’s milk of cows or other animals, but a 100% vegan, plant-based product which does not have the same properties as cheese made from animal milk.
