This handcrafted, fermented cheese alternative matures for 5–8 weeks in the cooling chamber of a small Spanish manufactory. Its base of locally grown lupins and fair-trade cashews is refined with white wine made from Chardonnay grapes – a variety renowned for its high quality. Its gentle acidity perfectly complements the savory umami flavor of the creamy base.

This vegan cheese alternative is not only free from gluten, lactose, and cholesterol, but also provides high-quality plant proteins and valuable fatty acids (Omega-3, -6, and -9). Through the fermentation process, natural probiotics are formed, which can support a healthy gut flora. The alcohol from the white wine evaporates during the reduction process, so the final product contains no alcohol.

For best results, store between 2–10 °C. We recommend keeping it uncovered (in its open packaging) so it can “breathe” and continue to mature naturally – enhancing its depth of flavor. Remove from the fridge about 5 minutes before serving to allow the aromas to fully unfold.

Note: This product is not cheese made from cow’s or other animal milk, but a 100 % vegan, plant-based alternative with its own distinct texture and character.
